What is kepta duona?
Kepta duona is a simple but highly recognizable Lithuanian snack. It is usually made from black rye bread, fried until crisp, and seasoned with garlic.
It is more a modern bar and home-snack tradition than an old ritual dish, but it directly rests on Lithuania's rye-bread culture.
Why did it become a Lithuanian snack?
A strong rye-bread tradition explains why even a simple fried snack in Lithuania has a clear local taste. Dark bread, garlic, salt, and fat create an intense serving style suited to drinks and company. Rye bread was the main everyday food in rural Lithuania until the mid-twentieth century, so its flavor is deeply rooted in local cooking; even this modern garlic snack rests on the same tradition.
Kepta duona is also a practical way to use leftover bread: a denser loaf becomes crisp as it fries rather than falling apart immediately.
Choosing the bread
Denser rye bread holds its shape better and gives deeper flavor. Bread that is too soft or sweet can absorb oil quickly.
The best fried bread is crisp on the outside but not burned.
Sauce
A modern serving is often hard to imagine without cheese and garlic sauce. It is not required, but it has become very popular.

How is kepta duona made?
The best kepta duona comes from dense, lightly sour rye bread. Garlic is added after frying so it does not burn and keeps its sharp flavor.
Ingredients
- 500 g black rye bread
- 4 garlic cloves
- Oil for frying
- Salt
- 100 g semi-hard cheese
- 2 tbsp mayonnaise or sour cream for the sauce
Method
- Cut the bread into sticks or triangles; the crust can be left on.
- Heat oil in a pan and fry the bread until browned on all sides.
- Drain on a paper towel, rub with minced garlic, and sprinkle with salt.
- For the sauce, mix grated cheese with mayonnaise or sour cream and a little garlic.
- Serve immediately while the bread is crisp.
Notes
Oven-baked or air-fried bread will be less greasy, but it can become drier.
