What is skruzdėlynas?
Skruzdėlynas is a festive dessert shaped like a mound or tower. It is assembled from thin, crisp sheets of dough.
Honey syrup binds the sheets, while poppy seeds and nuts add surface texture.

The sheets must be thin so they fry quickly and remain brittle. Dough that is too thick weighs down the whole dessert.
Irregular shape is part of skruzdėlynas: identical pieces matter less than lively, tall layering.
Syrup balance
Honey syrup must be thick enough to hold the sheets but not so hard that the dessert turns into candy.
Honey is best added at the end so its flavor is not boiled away.
Festive table
Skruzdėlynas is more often made for occasions that need an impressive dessert: birthdays, family celebrations, or larger feasts.
It is related to the broader tradition of honey-bound pastries but should not be treated as identical to similar desserts from other cultures.
Recipe
How to make skruzdėlynas
Skruzdėlynas sheets should be very thin, and the syrup should be sticky but not hard. Heat honey carefully so it keeps its aroma.
Ingredients
- 500 g wheat flour
- 5 eggs
- 3 tbsp sour cream
- A pinch of salt
- Oil for frying
- 250 g honey
- 150 g sugar
- 80 ml water
- Poppy seeds and chopped nuts for sprinkling
Method
- Knead a fairly firm dough from flour, eggs, sour cream, and salt. Rest for 30 minutes.
- Roll very thinly and cut into irregular sheets.
- Fry the sheets in oil until golden, then drain.
- Boil a syrup from water and sugar, then stir in honey at the end.
- Stack the sheets into a tower, drizzle each layer with syrup, and sprinkle with poppy seeds and nuts.
Notes
If the syrup is too thin, skruzdėlynas will not hold its shape; if it is too hard, it will be difficult to eat.
The dessert can be made the evening before, but keep it away from moisture.
