What are kūčiukai?
Kūčiukai are small poppy-seed baked pieces eaten during Kūčios. They may be crisp or somewhat softer, but the traditional table favors a small, dry form.
Most often kūčiukai are soaked in poppy milk, so they should absorb liquid without falling apart immediately.
The place of kūčiukai in the Kūčios dinner
Kūčios is a fasting dinner, so kūčiukai are made restrainedly: without meat, and often without milk or eggs.
In the Universal Lithuanian Encyclopedia's description of Kūčios, kūčiukai and poppy milk are mentioned as recognizable dishes of the Christmas Eve table. They belong not to luxurious desserts but to the ritual fasting table, where grains, seeds, fish, mushrooms, and restrained sweetness matter. According to the Universal Lithuanian Encyclopedia's overview of Lithuanian foods, prėskučiai or kūčiukai, poppy milk, and cranberry or oat kisielius are listed among surviving sacred dishes of the Kūčios table.
Poppy seeds are associated with calm, sleep, wintertime, and the symbolism of remembering ancestors.
Regional names
In different regions kūčiukai have been called šližikai, prėskučiai, and other names. These names show the living variety of family and local traditions.
Today the common name kūčiukai is the most recognizable across Lithuania.
Recipe
How are kūčiukai made?
Traditional kūčiukai should be small, poppy-seeded, and fairly dry so they can be soaked in poppy milk. This version without milk or eggs suits the fasting table.
Ingredients
- 500 g wheat flour
- 200 ml warm water
- 20 g fresh yeast or 7 g dry yeast
- 3 tbsp sugar
- 3 tbsp oil
- 3-4 tbsp poppy seeds
- A pinch of salt
Method
- Dissolve the yeast in warm water with sugar and leave until foamy.
- Mix the salt, poppy seeds, oil, and yeast mixture into the flour. Knead the dough.
- Let rise until doubled. Then form thin ropes and cut them into small pieces.
- Place on a baking sheet and bake at 180 °C until the kūčiukai are dry and lightly browned.
- Cool and store in a dry place.
Notes
Small kūčiukai dry better and soak more neatly in poppy milk.
