Krupnikas is a honey and spice liqueur associated with Lithuanian and Polish noble and later drink traditions. It differs from midus: krupnikas is a strong liqueur, while midus is a fermented honey drink.

What is krupnikas?

The Universal Lithuanian Encyclopedia describes krupnikas as a honey liqueur with spices. Its identity comes from honey, strong alcohol, spices, and maturation. According to the encyclopedia, it is a yellow-gold liqueur of about 40 percent strength, aged in oak barrels and drunk warmed to 50 °C; krupnikas began to be made by Bernardine monks in Nesvyžius at the end of the sixteenth century, and in Lithuania it was especially popular in the 1910s-1930s.

It is often drunk in small amounts, sometimes warmed, but it is not an everyday drink.

Difference from midus

Midus is made by fermenting a honey solution. Krupnikas is made by mixing honey, spices, and strong alcohol, so the technology and strength are completely different.

This distinction matters because both drinks contain honey but belong to different categories.

Spices

Cinnamon, cloves, ginger, cardamom, citrus peel, and sometimes caraway or other warming spices suit krupnikas.

The additions should create a warm aroma without overwhelming the honey.

Responsible use

Krupnikas is an alcoholic drink. A heritage description should not become encouragement to drink or a health promise.

It is important to follow the law, not drive after drinking, and avoid serving it to minors or people for whom alcohol is unsuitable.

How to prepare a krupnikas-style honey liqueur

This is the principle for a homemade krupnikas-style infusion. When making alcoholic drinks, follow current legal requirements and consume responsibly.

Ingredients

  • 500 ml water
  • 350 g honey
  • 250 g sugar
  • 500 ml strong vodka or food-grade spirit, diluted to a safe strength
  • 2 cinnamon sticks
  • 6 cloves
  • 3 cardamom pods
  • A few slices of ginger
  • Orange or lemon peel without the white pith

Method

  1. Gently heat the water, sugar, honey, and spices until dissolved, but do not boil for long.
  2. Cool to room temperature and strain.
  3. Mix with alcohol, pour into a clean bottle, and seal tightly.
  4. Mature in a dark, cool place for several weeks, checking the flavor occasionally.
  5. Serve in small amounts, sometimes gently warmed, but not boiled.
